Garlic Butter Chicken

Ingredients:

2 boneless skinless chicken breasts
.25 cup flour
1 tsp garlic powder
1 tsp salt
.5 tsp black pepper
3 tbsp butter divided
1 tbsp olive oil
2 cloves garlic minced
.5 cup chicken stock
2 tbsp fresh parsley chopped

Prep Chicken

  1. Mix flour, garlic powder, salt, and pepper in shallow dish.
  2. Butterfly chicken breasts through center to make 4 even pieces.
  3. Dredge each piece in flour mixture, pressing to coat evenly.

Cook

  1. Heat 1 tbsp butter and olive oil in large pan over medium-high heat.
  2. Cook chicken 3-5 minutes per side until golden and cooked through.
  3. Remove chicken and set aside.

Make Sauce

  1. Reduce heat to medium, add minced garlic to same pan.
  2. Cook 1-2 minutes until garlic begins to brown.
  3. Pour in chicken stock, scraping up browned bits.
  4. Add remaining 2 tbsp butter and parsley.
  5. Return chicken to pan and coat with sauce before serving.
