Drunken Noodles

Ingredients:
Amount Ingredient
7 oz dried rice noodles (wide)
2 tbsp oil (veg/canola/peanut)
3 cloves garlic
2 Thai Chiles finely chopped
1/2 onion
7 oz chicken (cut into bite sized pieces)
2 tsp fish sauce (or light soy)
2 green onions
1 cup Thai basil
3 tbsp oyster sauce
1.5 tbsp light soy
1.5 tbsp dark soy
2 tsp sugar
1 tbsp water
Recipe:
  1. Cook noodles following instructions on package.
  2. Mix : 3 tbsp oyster sauce, 1.5 tbsp light soy, 1.5 tbsp dark soy, 2 tsp sugar, 1 tbsp water in bowl. Set aside.
  3. Heat oil in wok over high heat.
  4. Add garlic and chile, cook for 10 - 15 seconds.
  5. Add onion, cook for 1 minute.
  6. Add chicken and fish sauce. Fry until cooked (~ 2 minutes)
  7. Add green onion, noodles, sauce. Cook for 1 minute (or until suace reduces and coats noodles).
  8. Remove from heat, add basil, tossing until wilted.

Note : if you can’t get pepper, chili paste is a good enough substitute for heat.
