Skillet Pork Chops

Ingredients:
Amount Ingredient
4 1 inch thick pork chops
1 tbsp flour
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
.5 tsp smoked paprika
.5 tsp black pepper
1 tbsp vegetable oil
1 cup chicken stock
1 tbsp apple cider vinegar
2 tsp honey or brown sugar
1 tbsp butter
2 tbsp parsley (optional)
Recipe:

You can substitute most of the spices for any dry rub.

Prepare Chops

  1. Lightly salt porchops and allow to rest for 30 minutes.
  2. Make your spice rub by mixing: flour, chili powder, garlic powder, onion powder, smoked paprika, and black pepper.
  3. Pat pork chops dry, and coat with spice rub.
  4. Heat oil in skillet on medium high. Cook pork 2-3 minutes on each side. (If you have a fat cap, hold on fat cap for 30 seconds.)
  5. Reduce heat to low, cover skillet and cook an additional 6-10 minutes. (Until internal temperature reads 145 F)
  6. Transfer chops to a plate, loosely cover with aluminum foil and let rest for 5 minutes.

Pan Sauce

  1. Increase heat to medium high. Add chicken stock, vinegar, and honey. Scrape pan well.
  2. Bring to a simmer and cook until reduced by half. Season to taste.
  3. Remove from heat and add cold butter.
  4. Add pork chops back in, spoon sauce on top.

Serve.
